One of my favorite foods in the entire world is arugula. It’s a bitter yet peppery green that is oh so tasty in salads, pestos, etc. So on my day off this week I decided to make a very random salad that contained arugula…
In the salad was:
-7 sliced kumquats (these guys are so much fun–sweet and sour!)
-2 diced dried dates
-some crushed up rosemary-pinenut toffee that my aunt brought back from California
-about 1 tsp homemade balsamic vinaigrette
This salad was very tasty and I ate the pear later on in the afternoon.
So what does a sick (cold aches and stuffiness) girl do for dinner? She makes pesto?!? Yup! That’s what I did tonight despite my aches and pains…
-pecans (was too lazy to toast them but you can do that)
-3 cloves of garlic (only thing I actually measured)
-parmesan cheese (trying to use up the block that is on it’s last leg)
-salt and pepper
Threw it into the mini food processor and blended away until it was smooth. Cooked up some fun pasta and tossed it all together for a tasty hot dinner. Doesn’t it look tasty?
I’ve always always always wanted a wooden cutting board and he made my dreams come true by showing up to my house last night with it. That being said, he spoils me too much!
3 more weeks of the internship and then updates will be more regular as I will have more of a life! Can’t wait!
