Homemade Granola Bars

One of my favorite snacks is granola bars; I almost always have one in my purse in case I need a quick sugar fix.  I’ve made granola plenty of times, but never attempted granola bars before.  So with the family’s stash of bars at a dangerously low-level (I think I saw 2 left), I figured a rainy afternoon would be the perfect time to attempt something new.

After browsing the web for granola bar recipes, I decided to base my recipe off of this one.  I tweaked the original recipe because I thought that there was too much sugar and fat and not enough other goodies.  I also adapted based on what I had in the house.

The results:  The bars didn’t turn out exactly how I wanted them to be, but they are very tasty nonetheless.  Next time, I would decrease the honey a bit more as it was still a bit sweet for me and I want to add some peanut butter (because I love it oh so much…).  Family and boyfriend did give it the approval though so here’s the recipe…

Homemade Granola Bars

Based off of a recipe by Joyful Abode

2 cups oats (gluten free if you want!)

1 cup sliced almonds

1 cup coconut, grated and sweetened

1/3 cup brown sugar

1/2 cup honey

2 tablespoons butter

1 tablespoon vanilla

3/4 cup dried dates, chopped

3/4 cup dried cranberries, chopped

1/3-1/2 cup dried nonfat milk powder

Toast oats, almonds, and coconut on a baking sheet in the oven (stirring often) until they become toasty (~10-15 minutes).

Combine the sugar, honey, butter, and vanilla together in a saucepan and heat/stir until the sugar is dissolved.

Toss the oats mixture, dates, cranberries, and milk powder in a bowl and pour in the sugar mixture.  Make sure to mix well as this will ensure bars that will not crumble.

Transfer the bar stuffs to a 9×13 inch pan lined with wax paper.  Pour it in the pan and cover with wax paper.  Next, get creative and figure out a way to forcefully press the bars down for 2-3 hours–I took a smaller pan and put it on top of the wax paper and filled that top pan with heavy books…and maybe my mom’s laptop….

After 2-3 hrs have passed, cut your bars into your desired shape.  Wrap in wax paper and store in the fridge (or freezer if you want to save some for a later date).
